Ingredients

8 ozs stale bread

4 ozs mixed fruit

2 ozs brown sugar

2 ozs shredded suet

1 oz chopped peel

3 teasp. mixed spice

1 egg

Break the bread into small pieces and soak in cold water for at least half an hour; then squeeze as dry as possible.

Put into a basin and beat out the lumps with a fork.

Add the dried fruit, sugar, suet, peel and mixed spice and mix well.

Add the egg (and perhaps just a little milk) to enable the mixture to drop easily from the spoon.

Put into a greased tin. Bake in a warm oven (335oF, Gas 3) for about 1 hour.

When done, turn out and dredge with caster sugar.

Note: These amounts are usually sufficient for a small meat tin (8" x 11")
